4 egg whites, at room temperature
150g caster sugar
1 tsp vanilla extract (optional)
Steps
- Whip the egg whites continuously until they are stiff before adding any sugar. Slowly add sugar, about 1 tablespoon at a time, until all the sugar has been added. Continue beating until the whites are stiff and glossy.
- Add the vanilla extract after all sugar has been added.
- Preheat the oven to 200°F. Line the baking sheets with parchment paper.
- Use a couple of large spoons to create cookie shaped meringues.
- Bake at 200°F for approximately 1 hour 15 minutes until completely dry and crisp throughout. Transfer the trays to wire racks and let the cookies cool to room temperature, about 15 minutes.
