Meringue

Ingredients
4 egg whites, at room temperature
150g caster sugar
1 tsp vanilla extract (optional)

Steps
  1. Whip the egg whites continuously until they are stiff before adding any sugar. Slowly add sugar, about 1 tablespoon at a time, until all the sugar has been added. Continue beating until the whites are stiff and glossy.
  2. Add the vanilla extract after all sugar has been added.
  3. Preheat the oven to 200°F. Line the baking sheets with parchment paper.
  4. Use a couple of large spoons to create cookie shaped meringues.
  5. Bake at 200°F for approximately 1 hour 15 minutes until completely dry and crisp throughout. Transfer the trays to wire racks and let the cookies cool to room temperature, about 15 minutes.
